While I was doing a flight from JFK to  DXB I left the sim running overnight and when I woke up in the morning to check up on it I saw on the cruise page on the ECAM that the cabin altitude had gone down to about -102000 feet, so I set the cabin altitude to manual in order to go back to a normal cabin altitude and the sim crashed.

That is very odd, can you please share the OFP for your flight? This should be available as a PDF from simbrief.  Also have you had this issue again ever since?
