This is a known issue, for now you can go into the Flight Engineer Checklist Items that can be found on the PFP, go to the Parking section and there close the APU bleeds and turn off the APU via that item. That will turn off the APU. Thank you.

I tried the above workaround but for my system, it seems to only turn off the master power switch, the APU is still running (voltage still present on the meter)

What seems to work for me is to hit the apu start switch again and then press the stop switch. After that, the apu spools down and voltage is gone on the meter.
