A330 Issues

I recently did a flight from LA- Manchester (EGCC) in the a330, i calculated everything like the fuel thru simbreif, imputed the flight plan and it's saying i don't have enough fuel. I tried this on another flight with the a330 and once again it was not enough. I have never had a issue with simbreif so im wondering is this a user error by me? Id really like to fix this so i can do long hauls again 

 

I also occurred a issue with the rudder as if it wouldnt turn at all which was strange as all chocks were off and nothing was connected e.g GPU.

Could it perhaps be that the fuel never actually loaded in the aircraft? I have had that issue multiple times.
