Overperforming Aircraft in the Sim?

On lots of flights I’ve noticed the plane’s performance doesn’t really match real life.
 

Taking off close to MTOW, there’s no way it should be climbing at over 4000 FPM like some kind of crazy rocket — the real thing is way smoother and not that jumpy.

Same goes for cruise levels — it always picks something way too high for the weight. 

From my point of view, it’s the most striking thing I’ve noticed. It doesn’t match reality
