Guys, I think I have solved it. I found a video (unfortunatley in french but thank you Youtube for Translation).
Essentially you have to map an axis to the brake Axis 1 & 2, then delete any other Brake Inputs beside one you want to use for breaks.
After doing this, the plane finally moves. What a nightmare...
